Wrap a piece of bacon around an individual onion ring; continue until bacon is gone. Some onion slices may be larger and require 2 pieces of bacon to complete a ring.
Place a skewer through the bacon-wrapped onion slice, to keep bacon from unraveling while cooking.
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400 degrees F and preheat, lid closed, for 10 to 15 minutes.
Meanwhile, mix chili garlic sauce and yellow mustard in a small bowl until incorporated; add honey.
Place skewers on the grill grate and cook for approximately 90 minutes, flipping after 45 minutes. Enjoy!
